Bà Hoa learned this from her mother on the flood plains where catfish run fat in October. The clay pot seals in a funk that no stainless pan ever will — the sugar caramelizes against fired earth, not metal.

Twenty-two herb varieties, all grown within three kilometres of the kitchen. Bà Mai insists the sawtooth coriander must be picked before the dew lifts — after that, the essential oils have already begun their retreat.

The broken grains — the ones that shatter in the mill — were once sold cheaply to workers who couldn't afford whole rice. Bà Bích made them into something better than whole. The shards hold the pork juices in a way perfect rice never could.
